Tip: Skip the traditional size dinner plate! We are programmed as children to "finish your plate". Our minds feel like we need to fill our plate to be satisfied, so do just that but use a salad size plate, eat slow, and listen to your body...it will tell you when it is full!
Challenge: 100 Jumping Jacks (singles), 50 Air Squats, 25 Push-Ups, 10 Walking Lunges x 2
Recipe: This one is Paleo approved as well for those of you that are interested:) Chicken Tortilla Soup, minus the tortilla!
Ingredients: 2 chicken breast, 1 28 ounce can of diced tomatoes, 32 ounces of organic chicken broth, 1 sweet onion-diced, 2 jalapenos, de-seeded and diced, 2 cups of shredded carrots, 2 cups chopped celery, 1 bunch of cilantro chopped fine, 4 cloves of garlic. minced, 2 tbs of tomato paste, 1 tsp chili powder, 1 tsp cumin, 2 cups of water, sea salt and pepper to taste.
I use the chicken from a roaster chicken for convenience- if not bake or boil your chicken first until cooked through. Then to a stock pot add tomato paste and garlic and let it cook down, then add in the chicken broth...continue to add all additional ingredients and cook over medium heat stirring frequently for approximately an hour. Enjoy:) If you like top with a dab of greek yogurt and a slice of avocado.
