Tip: Keep your options open. Learning to incorporate new food into your diet is beneficial for many reasons. Different foods obviously have different nutrients and the more variety you use when cooking the less bored you will get with your meal options! It will be easier to stay on track if you have a variety of foods and recipes available.
Challenge: Make a recipe tonight that you have never tried:)
Recipe: "Spaghetti Pie"
Ingredients: 1 large spaghetti squash, 1 pound lean ground beef (93/7) or ground turkey, 1/2 cup sweet onion, 1/2 cup green pepper, 1/2 sliced mushrooms, 1 cup organic pizza sauce, 1 tbsp dried oregano, 1 tbs garlic powder, 1 tbs fennel seed and 3 eggs whisked.
Preheat oven to 400 degrees, cut spaghetti squash in half lengthwise. Remove seeds and place it cut side down and bake for about 25 minutes. Then reduce oven temp to 350.
Remove the "spaghetti" from the center of the squash and place in an 8x8 greased baking dish. (Use spray Pam)
In a separate pan cook onion, green pepper, mushrooms, and ground beef. Add 1 tbsp of garlic powder, fennel seed, and oregano while cooking.
Once ground beef mixture is cooked (no pink) add pizza sauce.
Then add all ingredients to the 8x8 pan with the spaghetti squash.
Lastly add the whisked eggs to the baking dish and mix everything together,
Place in the oven and bake for 1 hour or until the top forms a slight crust that doesn't give when you press in the middle.
Let rest for 5 minutes before serving. Paleo Approved*
